We pickle, preserve, and salt vegetables from the garden, meat from the deer park, and honey from our beehives, enabling us to serve farm-to-table meals throughout all seasons. On our breakfast buffet, you’ll only find apple juice from a local orchard — not orange juice from Spanish oranges. We have a strong commitment to sourcing quality ingredients locally.

Our 640,000 bees play an important role in promoting local biodiversity, and we actively inspire and support others who wish to start beekeeping. The world needs more bees — without them, we face a shortage of essential crops.
